FRUIT JUICE/VEGETABLE CONCENTRATES
Concentrates are first naturally pressed juices which are concentrated by removing water and increasing the sugar content. There are several key reasons for this; 1. Converting fruit that is not as desirable for the fresh fruit market to another cate 2. Providing all year supply of raw materials for the/manufacture of juice all year. 3. Transportation costs. Concentrate then reconstitute in market. 4. Storage costs The reduction of water is performed in several ways-Heating and evaporation of water. The fruit is first washed and crushed. The removal of the aroma content of the fruit and its incorporation in the finished product/or unique product offering is part of this process.-Freezing of the juice and then separating the crystallized ice by centrifuging.- Reverse osmosis- a separation through a pressure membrane system.Fruit juice concentrates contain most of the fruit components of fresh juice: the sugars, acids, minerals, color and other components. | ||||||||||||||||||||
